One Special Recipe: Poori Aloo -The Quintessential Sibling Homecoming Meal

  • Aloo Sabzi: Heat oil, temper mustard and cumin. Add onion until golden. Add 2 tomatoes, cook deep. Add boiled cubed potatoes + coriander powder, cumin, red chilli, amchur, salt. Cook 10 minutes. Finish with coriander.
  • Poori dough: 2 cups wheat flour + salt + 1 tsp oil + water to make medium-firm dough. Rest 20 minutes.
  • Roll small rounds (3–4 inches). Fry in hot oil -press gently in the centre as each poori goes in to encourage puffing. Remove when golden.
  • Serve immediately -pooris do not wait. Eat the moment they come out of the oil.
