4 Essential Recipes for the Big Day

1. Masale Bhat - Spiced Rice (Serves 6-8)

  • Heat 3 tbsp ghee. Crackle mustard, cloves, bay leaf, cinnamon.
  • Add onion until pink. Add 2 tomatoes, cook until soft.
  • Add 2 cups washed rice, 2 tsp goda masala, salt, 1 tsp sugar. Add 4 cups water.
  • Pressure cook 2 whistles or simmer covered 20 minutes.
  • Garnish with fried cashews and fresh coconut.

2. Katachi Amti - Thin Dal From the Puran Leftovers

This dish wastes nothing - it is made from the water and dal left over from making puran poli filling.

  • Combine: cooked chana water, 1/2 cup mashed chana, tamarind pulp (2 tbsp), jaggery (1 tsp), goda masala (1 tsp), hing, salt
  • Simmer 10 minutes. Temper with ghee, mustard, curry leaves, and red chilli.
  • Should be thin, slightly sweet-sour-spicy - serve poured over rice.

3. Sol Kadhi - The Cooling Festival Drink

  • Soak 15-20 kokum in 1 cup warm water 30 minutes. Squeeze and strain - the water turns deep pink.
  • Mix with 1 cup coconut milk. Add crushed garlic, 1/2 tsp cumin powder, sendha namak, coriander, green chilli.
  • Chill. Serve in small glasses. Both cooling and digestive.

4. For Children - Quick, Always-Eaten Additions

  • Puri instead of puran poli - children universally prefer it
  • Plain rice + mild yellow dal with ghee - simple, reliable
  • Curd rice - cooling, easy to eat, no supervision needed
