This guide gives you 8 recipes that work without mawa, without special equipment, and without the kind of effort that makes you wish you'd just ordered from the mithai shop.

Recipe 1: Besan Ladoo - The Diwali Classic

Ingredient

Besan (fine variety - ladoo besan preferred)

2 cups

Ghee

1/2 cup + 2 tbsp extra

Powdered sugar

1.5 cups

Cardamom powder

1/2 tsp

Chopped cashews and raisins

A generous handful

Method:

  • Heat ghee in a heavy-bottomed kadhai on LOW heat. Add besan. Roast, stirring constantly, 15-20 minutes until the colour deepens to warm golden-brown and the kitchen smells like roasting nuts. This step cannot be rushed - low and slow is everything.
  • Remove from heat. Cool 5-7 minutes - hot besan absorbs more sugar and becomes too sweet.
  • Add powdered sugar, cardamom, and dry fruits. Mix well.
  • Shape into balls while still warm - at the ideal temperature they hold together perfectly.
  • If mixture doesn't bind: add 1-2 tsp warm ghee. If too soft: cool a few more minutes.
  • Makes approximately 20 ladoos. Keeps at room temperature for up to 2 weeks.

Recipe 2: Kaju Barfi Without Mawa - 3 Ingredients Only

  • Blend 1 cup raw cashews to fine powder. Sieve to remove lumps.
  • In a pan: combine 1/2 cup sugar + 1/4 cup water. Cook to single-thread consistency.
  • Add cashew powder. Stir on low heat until dough pulls away from sides (5-7 minutes).
  • Knead lightly while warm, roll on greased plate to 1/2 cm thickness. Cut into diamonds.
  • Optional: silver vark for presentation. Refrigerate 30 minutes before serving.

Recipe 3: Coconut Barfi - 4 Ingredients, 15 Minutes

  • Heat 1/2 cup condensed milk in a pan. Add 2 cups desiccated coconut, stir on medium heat until thick and pulling away from the pan (8-10 minutes).
  • Add cardamom and saffron soaked in 1 tbsp warm milk.
  • Pour into greased tray, press flat, refrigerate 30 minutes, cut into squares.

Recipe 4: Milk Peda - Quick and Universally Loved

  • Combine 400g condensed milk + 1 cup milk powder + 1 tbsp ghee in a non-stick pan.
  • Cook on medium heat, stirring constantly, until it thickens to a dough and leaves the sides (12-15 minutes).
  • Add cardamom. Cool slightly. Shape into flat rounds. Press a pistachio on top.
  • Refrigerate 1 hour before serving.

Recipe 5: Chocolate Burfi - The Children's Contribution

  • Melt 200g dark chocolate + 100g milk chocolate in a double boiler.
  • Mix in 1/2 cup roasted crushed dry fruits (almonds, cashews, pistachios).
  • Add a pinch of cardamom and sea salt.
  • Pour into greased tray lined with baking paper. Refrigerate 2 hours. Cut into squares.
  • Children can make this independently from age 8. Gifts beautifully in a box.

Recipe 6: Atta Pinni (Wheat Flour Ladoo) - North Indian Classic

  • Roast 2 cups whole wheat flour in 3/4 cup ghee on very low heat for 20-25 minutes until fragrant and golden.
  • Cool slightly. Add 1 cup powdered jaggery, 1/2 tsp cardamom, grated dry coconut, chopped dry fruits.
  • Shape into balls while warm. Keeps at room temperature for up to 2 weeks.

  • Grate 500g fresh red carrots. Pressure cook with 1 cup full-fat milk for 3 whistles.
  • Open, cook off excess water on high heat. Add 4 tbsp ghee, 3/4 cup sugar, cardamom.
  • Cook until ghee separates and halwa is glossy. Add saffron soaked in 2 tbsp warm milk.
  • Garnish with fried cashews. Serve warm - or refrigerate and rewarm later.

Recipe 8: Gulab Jamun From Ready Mix - Not Cheating, Just Smart

  • Use MTR or Gits mix - these are genuinely good.
  • The only real mistake: rushing the frying. Fry on VERY low heat for 8-10 minutes until deeply golden.
  • Sugar syrup: thin consistency, warm (not cold). Balls must go into warm syrup.
  • Soak minimum 2 hours - overnight is best. They will triple in size and be perfectly syrupy.
