3 Recipes Worth Making for Diwali Night

1. Dal Makhani - Make the Day Before (Always Better That Way)

  • Soak 1 cup whole urad dal + 1/4 cup rajma overnight. Pressure cook 15 whistles until very soft.
  • Separately: heat butter, cook deep onion-tomato masala. Add ginger-garlic, red chilli, coriander, salt.
  • Add cooked dal. Simmer on VERY low heat for 45 minutes - this step is non-negotiable for flavour.
  • Add cream at the end. Reheat gently on Diwali day. The longer it simmers, the better it tastes.

2. Shahi Paneer - Ready in 30 Minutes

  • Soak 10 cashews + 2 tbsp poppy seeds + 2 tbsp melon seeds in warm water 20 minutes. Blend to smooth paste.
  • Cook onion-tomato gravy. Add the nut paste. Cook until oil separates.
  • Add paneer cubes, cream, sugar (1 tsp), cardamom. Simmer 10 minutes.

3. Diwali Kheer - Made the Night Before

  • Bring 1 litre full-fat milk to a boil then simmer on medium heat.
  • Add 3 tbsp washed rice. Cook 40-45 minutes, stirring every 5 minutes, until reduced by half.
  • Add 4 tbsp sugar, saffron soaked in warm milk, cardamom, chopped dry fruits.
  • Serve warm or refrigerate and serve chilled. Both are correct.

The Diwali Potluck - When Everyone Contributes

  • You: Dal Makhani + puja space + hosting - this is already a full contribution
  • Sister / bhabhi: Paneer sabzi + raita
  • Parents / in-laws: Mithai box + achaar (they have the mithai relationships)
  • Friends visiting: Dessert or cold drinks and juices for the evening
  • Everyone: Pick up naan from the dhaba on the way - saves one cooking task completely
