A window seat is always a winner for kids under five. Planes, clouds, and runways are all interesting.
I Spy and 20 Questions require no materials and are best for kids over four.
Travel journals for older kids give the ability to write, draw, and stick their boarding passes to a journal to save as a memento.
A bored Kids like the ability to help, and picking things to snack on and organizing the seat pocket is totally a help.
Child is often a hungry child, so plan for a variety of fun small snacks that are all kid-approved.
